Ingredients:
Tiramisu Cream:
• 250 g mascarpone cheese (room temperature)
• 3 egg yolks • 80 g sugar (about ⅓ cup)
• 200 ml cold heavy whipping cream
• 1 tsp vanilla extract
For Assembly:
• 200–250 g ladyfinger biscuits (savoiardi) or plain tea biscuits
• 1 cup strong brewed coffee (cold)
• 1–2 tbsp cocoa powder (unsweetened)

Instructions:
1. Prepare the Cream:
1. In a heatproof bowl, whisk the egg yolks and sugar over a gentle water bath until the sugar dissolves and the mixture becomes pale and creamy.
2. Remove from heat and let it cool completely.
3. Add the mascarpone cheese and vanilla and mix gently until smooth.
4. In a separate bowl, whip the cold heavy cream to medium peaks.
5. Gently fold the whipped cream into the mascarpone mixture in batches.
2. Assemble the Tiramisu:
1. Quickly dip the biscuits into the cold coffee (1–2 seconds only — do not soak).
2. Arrange a layer of dipped biscuits in the bottom of a dish or cups.
3. Spread a layer of the tiramisu cream evenly on top.
4. Repeat with another layer of biscuits, then finish with a final layer of cream.
3. Chilling & Finishing:
1. Cover and refrigerate for 4–6 hours (or overnight for best flavor).
2. Just before serving, dust the top generously with cocoa powder using a sieve.
