🍓 Ingredients

For the pavlova:

  • 100 g egg whites (about 3 large eggs)
  • 100 g granulated sugar
  • 100 g powdered sugar
  • 1 tsp white vinegar or lemon juice

For the topping:

  • 200 ml whipping cream, whipped
  • Fresh berries (strawberries, raspberries, blueberries, or mixed fruit)

🥧 Instructions

01Prepare the meringue

Preheat the oven to 120 °C (250 °F) and line a baking tray with parchment paper.

Whisk the egg whites with vinegar (or lemon juice) until soft peaks form.

Gradually add the granulated sugar, one tablespoon at a time, whisking well after each addition until the mixture is thick, glossy, and forms stiff peaks.

Fold in the sifted powdered sugar until just combined.

02Shape the pavlova

Spoon the meringue onto the prepared tray, forming a circle about 18–20 cm in diameter.

Use the back of a spoon to create a slight well in the center to hold the filling after baking.

03Bake

Bake for 1 hour 15 minutes , then switch off the oven and leave the pavlova inside with the door slightly ajar for 1–2 hours to cool completely. This helps prevent cracking.

04Decorate

Transfer the cooled pavlova to a serving plate.

Spread the whipped cream over the center and top generously with fresh berries or your favorite seasonal fruit.

Serve immediately for the perfect combination of crisp shell, marshmallow-soft center, and fresh fruit.
